Super green spinach differs from classic creamed spinach because the aromatic purée intensifies the flavor and creaminess without adding too much cream. This is my own interpretation of an American classic which I have been making for a long time and I am happy to bring to La Tête d’Or!

Technique tip: Chill the super green purée quickly over ice if not using right away to keep the bright-green color.
