As the cold and dark season lingers, food becomes an essential comfort to keep us warm from within. To help beat the winter chill, culinary whizz Bored of Lunch, also known as Nathan Anthony, has been delighting followers with his easy-to-make dessert recipe that’s perfect for a slow cooker.

Throughout the frosty months, Nathan has been showcasing a variety of recipes that demonstrate the versatility of slow cookers, proving they’re not just for hearty stews but can also create mouth-watering sweets. In a throwback TikTok video, he demonstrated how to make one of Britain’s beloved treats, sticky toffee pudding, using this energy-efficient kitchen gadget.

The beauty of this recipe is its simplicity it can be quickly assembled in the slow cooker and left to work its magic. Nathan shared his enthusiasm for the dessert, posting: “Slowcooker Sticky Toffee Pudding. Pudding in a slowcooker? The most delicious, moist sponge made with five minutes hands on time.”

The video became a hit, amassing a whopping 689,900 views, alongside 17,000 likes and numerous comments. Dessert enthusiasts were quick to commend Nathan for his straightforward and tasty pudding, reports the Daily Record.

If you’re after a simple, crowd-pleasing dessert, here’s what you’ll need to whip up Nathan’s comforting winter pudding.

Slow cooker sticky toffee pudding

Ingredients

Sponge

  • 200g pitted dates steeped in 150ml of boiling water
  • 100g unsalted butter
  • 3 tbsp treacle
  • 200g self raising flour
  • 170g dark muscovado sugar
  • 1 tsp bicarbonate of soda
  • 2 eggs
  • 1 tsp vanilla (optional)

Sticky Toffee Sauce

  • 100g dark muscovado sugar
  • 100g butter
  • 170ml double cream

Method

  1. Steep the dates in the boiling water for 30 minutes. Once the time is up, mash the dates with a fork.
  2. Add the dates to a bowl, before adding in the remaining sponge ingredients. Add to a greased slow cooker and cook on high for two to two and a half hours. Or if you want to cook on a low temperature, cook for five hours.
  3. Once the pudding is nearly done, it’s time to make the toffee sauce. To make, add all of the ingredients into a saucepan at low heat and cook for two minutes until thickened.
  4. Once the done, drizzle over the sponge keeping some for the bowls. Serve and enjoy!
